Warm Cheese Dip with Sweet Onion

Make sure you use a sweet onion, as regular onions are too strong.

1 large Vidalia onion or other sweet onion, finely chopped
6 oz pepper-jack cheese, shredded
6 oz reduced-fat cheddar cheese, shredded
4 oz light cream cheese
1/2 c light mayonnaise
1 tsp fresh thyme leaves, chopped OR 1/4 tsp dried

Heat oven to 375°. Place 2 cups of the onion in a bowl. In food processor, process cheeses, mayonnaise,thyme and remaining onion until fairly smooth. Mix in the 2 cups of onion. Spoon into shallow ungreased 6-cup baking dish. Bake in oven 20 minutes. Stir. Bake 10 minutes more. Let cool slightly.
Serve with crackers, bread, or apples.
Makes 16 servings.
