Holiday Vegetable Medley

10 oz pkg frozen broccoli, thawed
16 oz can bean sprouts, well drained
10 oz pkg frozen peas, thawed
1 can cream of mushroom soup
1/2 lb Velveeta cheese, cubed
2 oz jar chopped pimiento, drained
1 c canned French fried onions

Cut broccoli into 1" pieces. Add sprouts, peas, soup, Velveeta, and pimiento; mix lightly. Spoon into 10X6" baking dish. Bake at 350º for 30 minutes. Top with onions; continue baking 10 minutes. Let stand for 10 minutes before serving.
Serves 6-8.
