Stuffed Turkey Breast with Seasoned Dressing

1/2 c butter or margarine
1 c water
2 chicken flavored bouillon cubes
2 tsp finely minced green pepper
2 tsp dried parsley flakes
1 tsp poultry seasoning
8 slices day old bread, cut into 1/2" cubes
1 (6 lb) whole turkey breast
1/4 tsp salt
1/4 tsp pepper
1/4 c butter or margarine,melted

Sauté onion in 1/2 c butter in large skillet. Add next 6 ingredients; simmer 5 minutes, stirring to dissolve bouillon cubes. Add bread; stir until mixture is moistened.
Bone turkey breast, leaving skin intact; cut a pocket. Sprinkle with salt and pepper. Stuff pocket with bread mixture; secure with wooden picks. Place turkey, skin side up, in shallow baking pan. Insert meat thermometer, making sure bulb rests in meat of turkey and not touching bone. Bake at 325º for one hour and 15 minutes or until meat thermometer registers 185º. Baste with 1/4 c butter.
Serves 10-12.
