Turkey Barley Soup

1 turkey carcass
2 quarts water
1 1/2 c chopped onion
4 sprigs parsley
1 bay leaf
1 1/4 tsp salt
1/2 tsp poultry seasoning
1/2 c sliced carrots
1/2 c sliced celery
1/3 c medium barley, washed
1 can tomatoes, undrained and chopped
1/4 tsp Tabasco sauce
parsley for garnish

Break apart turkey carcass and place in a large soup pot. Add water, 1 c onion, parsley sprigs, bay leaf, salt and poultry seasoning. Bring to a boil. cover, reduce heat and simmer 1 1/2 hours. Strain stock and return to pot. Remove meat from carcass; set aside. Add remaining onion, carrots, celery and barley to stock. Cover and bring to a boil. Reduce heat and simmer 45 minutes, or until barley is tender. Add tomatoes, reserved turkey and Tabasco. Heat to serving temperature. Garnish with chopped parsley.
