Stuffin' Bites

1/4 c butter or margarine
1 small onion, chopped, about 1/2 cup
1 rib celery, chopped
1/2 tsp dried thyme
1/4 tsp pepper
1/8 tsp salt
8 oz pkg cubed herb-seasoned stuffing, about 4 cups
1 c chicken broth
1 egg, lightly beaten
1/4 c chopped fresh parsley

Preheat oven to 350º F. Coat baking sheet with cooking spray. In large skillet melt butter over medium heat. Add onion, celery, thyme, pepper and salt. Cook, stirring occasionally, until vegetables are just softened. Remove from heat; stir in stuffing, broth, egg and parsley until stuffing is moistened and mixture is combined. Form heaping tablespoons of mixture into 1 1/2" wide balls. Place on baking sheets. Bake until golden, 25-30 minutes.
Makes about 30 bites.
