Hot Spinach Dip

9 oz pkg frozen spinach, thawed, squeezed to drain, chopped
8 oz pkg light cream cheese, softened
1/2 c shredded carrots
1/2 c sour cream
1/8 tsp onion powder
1/2 tsp dried dill weed
2 oz jar sliced pimiento, drained

In 1 qt microwave-safe casserole, combine all ingredients; mix well. Cover with microwave safe waxed paper or plastic wrap. Microwave on high for 3 to 5 minutes or until hot, stirring twice during cooking. Serve immediately with crackers and cut-up vegetables.
Makes about 2 cups.
