Glazed Pork Roast

6-7 lb pork roast
6 oz can orange juice concentrate, thawed
1/3 c firmly packed brown sugar
2 (1 lb) jars spiced crab apples (optional)

Wipe roast with damp cloth. Place on rack in shallow roasting pan. If desired, place meat thermometer in lean part. Roast in 350º oven for approximately 4 to 4 1/2 hours. Mix orange juice with brown sugar. Baste roast with a third of the mixture. Continue roasting for another half hour or to a temperature of 185º on meat thermometer. Baste two or three times during cooking process. When roast is done, place on heated platter and let stand 20 minutes for easier carving. Meanwhile, heat crab apples and juice in saucepan; arrange apples around roast. Pour off grease from baking pan and add enough water to give glaze a sauce consistency. Bring to a boil and serve with meat. Serves 10-12.
