Brandied-Mincemeat Ice Cream Pie

1 1/2 c finely ground chocolate wafer cookies (35 cookies)
5 Tbsp unsalted butter, melted
1/2 tsp vanilla
1/8 tsp salt
1 quart vanilla ice cream, softened
1 c prepared mincemeat with brandy
Stem-on maraschino cherries, for garnish

Mix cookie crumbs, butter, vanilla, and salt in bowl. Spoon over bottom of 9" pie plate; press into bottom and up sides.
Mix ice cream and mincemeat in large bowl. Spoon into pie shell. Cover with plastic wrap and freeze for at least 5 hours or until firm. To serve, remove pie from refrigerator. After about 30 minutes, top with cherries and slice.
Makes 10 servings.
