Glazed Pork Medallions

1 lb pork tenderloin
1/2 tsp salt
1/4 tsp pepper
1 garlic clove, minced
1/4 c pineapple juice
2 Tbsp apricot jam
2 tsp fat-free chicken broth

Slice pork into 8 3/4" slices. Season with salt and pepper. Coat a large skillet with cooking spray and heat over medium-high heat. Add the pork to skillet and cook, turning once, for 6 mins, or until browned on outside and no traces of pink remains. Transfer to a platter. Add garlic to skillet and cook, stirring, for 30 seconds. Stir in pineapple juice, jam and broth. Bring to a boil and cook 1 minute longer, or until slightly thickened. Return pork to pan, turn to coat with glaze, and cook til heated through. Serve immediately.
