Coco-Mint Fudge

2 1/4 c sugar
3/4 c evaporated milk
4 c chocolate chips
1/3 c light corn syrup
2 Tbsp margarine
1 tsp vanilla
1 c shredded coconut
1 tsp peppermint extract
walnuts (optional)

Combine sugar and and milk. Heat over medium heat, stirring constantly, until mixture boils. Reduce heat to low, and continue cooking 10 minutes, stirring constantly, to prevent scorching. Turn off heat and immediately add chips, syrup, margarine and vanilla. Stir until chocolate has melted and fudge is smooth and creamy. Mix in coconut and peppermint extract. Pour into battered 9X13" pan. Chill until firm. Cut into squares.
