Chicken Capri

4 chicken breasts salt and pepper to taste
2 c celery, chopped
1/2 c chicken broth
1 c onion, chopped
1 can mushroom soup
1 small jar pimientos, chopped
1 can chow mien noodles
1/2 c cashew nuts, halved

Cover chicken with water, season with salt and pepper. Simmer until chicken is tender. Debone chicken; chop into 2" pieces. Simmer celery and onion in chicken broth. Dilute mushroom soup with broth. Mix all ingredients, reserving some noodles and nuts. Place in casserole and bake in 350º oven for 40 minutes or until bubbly. Top with remaining noodles and nuts. Serves 10.
